Product detailed description

An elegant sparkling Blanc de Noirs wine, made from Pinot Noir grapes using the traditional Champagne method of secondary fermentation in the bottle. The wine comes from certified organic vineyards in Kurdějov, specifically from the Ebeny plot with a unique planting density of 12,800 vines/ha.

Serving Recommendations

Serve well chilled at 6–8 °C. Ideal as a welcome drink or for celebrations and special occasions.

Food Pairing

Perfectly pairs with strawberry or raspberry sorbet, berry jelly, and also with brie cheese. An excellent choice with mascarpone-based desserts or fresh fruit.

Cellaring

The wine is suitable for ageing for 5–7 years.

Wine Characteristics

Colour:	Pale, lightly golden with pinkish reflections.
Aroma:	Rich and complex, dominated by red berries—especially strawberries and raspberries—complemented by notes of cream and gentle toast.
Taste:	Fresh and harmonious, with pronounced fruitiness and a mineral undertone. The finish is delicate, with a subtle note of almonds and creaminess that lingers. Fine, even, and long-lasting bubbles.
Overall Impression:	Well-balanced wine with pronounced structure and long persistence.

Vinification and Ageing

Harvest:	The grapes were hand-harvested into small crates with a maximum capacity of 10 kg.
Maceration:	After selection on vibrating tables, whole bunches were gently pressed.
Fermentation:	The wine matured for 18 months on lees in a combination of stainless steel tanks, large barrels, and French oak barriques, which enhanced its complexity.
